Sous Chef - Full Time

We are currently seeking a Sous Chef to join our Kitchen team. Reporting to the Head Chef, you will assist in daily food preparation, execution and be an integral part of creating new and exciting menu's and experiences for our guests, whether it be from the kitchen itself or from our extensive kitchen garden showcasing our homegrown produce, if you are looking for a role with diversity we'd love to hear from you. The successful candidate will have the opportunity to deliver both A la Carte and Function and Wedding dining experiences.ABOUT YOU:

• Certificate III & IV in Commercial cookery (minimum)
• Experience as a Sous Chef
• Experience with menu planning and development
• Managing inventory and control food costs
• Experience with developing new recipes and techniques for preparing food
• Ensuring that all dishes meet the highest standards of quality
• Creating and managing tight budgets for kitchen operations
• Ensuring consistency in the quality of dishes prepared by your team
• Reducing waste and maximizing efficiency in the kitchen
• Involved with purchasing goods
• Managing a kitchen team members of diverse backgrounds and personalities
• Ensuring that all kitchen staff adhere to proper hygiene and sanitation protocol
• An understanding of food safety and HACCP principles
• Availability to participate in a 7 day working roster of days, nights and weekends.
• Ability to work under pressure in a high volume, fast paced environment
• You will have full, unrestricted rights to work in Australia - No VISA will be offered for this role.
