Based at Rosehill Gardens and reporting into the Executive Chef, the Chef de Partie will be responsible for the preparation, cooking and presentation of food for the vast array of events held at our iconic venues.
Key objectives of the role include:
- Prepare, cook, and present food on race days and non raceday events
- Supervision of the casual kitchen brigade always ensuring quality control including the correct handling of stock
- Provide training and development to apprentices and the casual team, providing guidance and direction
- Assume the position of team leader in the absence of senior Chefs
- Monitor and take corrective action to reduce waste and misuse of food products, kitchen chemicals and energy
- Make recommendations for improvements to presentation and quality of food
- Contribute to the compilation of menus for all retail outlets contributing new ideas and innovative improvements
- Ensure high standards in hygiene are maintained in cleaning and food preparation and service areas
- Promote and champion safety and wellbeing within the business
To be successful in the role, the right fit will possess:
- Chef accredited with professional catering qualifications
- Proven experience working as a qualified Chef producing high quality work in large multi outlet establishments
- Experience delivering on the job training to apprentice and casual Chefs
- Knowledge and understanding of OH&S and HACCP policies with the ability to implement safe work practices
- Enthusiastic, self-motivated person with a ‘can do’ attitude
- Willingness to participate as part of a team
- A strong desire to learn and develop new skills
- A knowledge of or interest in the thoroughbred racing industry, would be an advantage
- Strong oral communication and interpersonal skills to effectively delegate duties to staff and facilitate teamwork
- Effective written communication skills are required for preparation of menus, reports and correspondence
- Ability to prioritise tasks, develop plans and meet deadlines
- Proactive with attention to detail
- Strong organisational skills and a sense of timing are required.
