Responsibilities -
Prepare and design menu items, taking into account the profitability and efficiency of each dish.
Direct food preparation, order and purchase supplies and take stock inventories.
Manage and train kitchen staff, ensuring all staff comply with regulations and safety standards
To cover for the other chefs in their absence
Carry out Mise en Place as per the list given by the head/exec chef to the required standard to the recipe ensuring taste, presentation and serving a timely
Prepare/cook and serve according iin manner to the standard of OH
Respect and ensure all areas of HACCPS are observed and used by yourself and your section. Any areas non-compliant to HACCPS must be reported to senior chefs
Ensure all areas of COVID compliance are adhered to for the section and any areas of non-compliance to be reported to the Head Chef
Under request to assist the Head Chef in the preparation of dishes for recipe costings
Prepares food requisitions according to occupancy and interdepartmental transfers for approval
Share ideas for new dishes for the section with the Heaf chef.
Skills -
Requires good communication skills
Must have excellent people-skills and be able to create a positive working relationship with other people
Knowledge and exposure to menu planning, management of people, kitchen costs & food safety procedures
Experience / Requirements -
Minimum 2 years relevant experience ideally in the luxury sector in the role
Certificates Required: Certificate 3 or 4 in Commercial Cookery or equivalent as a minimum
2 verbal references from recent roles
