POSITION SUMMARY
Associate Journey:
- Arrive at work on time in the correct attire, conforming to the Pier One Sydney Harbour Grooming LSOP.
- Obtain a solid knowledge of the hotel product including room types, rates, food and beverage outlets and other hotel features and guest facilities.
- Support and abide with the Pier One Sydney Harbour Hotel LSOP’s pertaining to Anti–Discrimination, Sexual Harassment, Equal Employment Opportunity and Guarantee of Fair Treatment.
- Understand and demonstrate the Marriott Basics.
- Perform all duties to satisfy the Marriott “Business Ethics” value system of integrity, fairness, respect, honesty and trust.
- Be aware of all-environmental practices, policies and procedures and implement these on a daily basis.
- Be aware and adhere to all Pier One Sydney Harbour Occupational Health and Safety and Security policies and procedures.
- Support the Marriott “Information Protection Policy” and conform to all requirements of the authority.
- Perform any reasonable task as requested by management.
Operational:
- Keeps the work areas tidy and clean.
- Minimises spoilage and utilises food surplus control.
- Maximises personal productivity.
- Stores food as per the 43 point check list
- Ensures that all food is prepared and served according to the standard set by the Hotel.
- Produces cooking and presentation of food under supervision.
- Ensures standard recipes are used and that food is presented according to pictures.
- Ensures that all machines, furniture (fridge’s, benches, etc), equipment and utensils are clean and in working condition at all times.
- Checks all assigned areas in regards to sanitation and hygiene to prevent contamination of any kind.
- Ensures the kitchen is always in a safe condition to prevent accidents.
- Maintains interdepartmental communication.
- Training as directed
Marketing:
- Represents the Culinary Team in an absolute correct manner when in public areas.
Employee Conduct:
- Maximizes personal productivity and morale, and consistently maintains discipline following Hotel policies and procedures.
- Attends College and or TAFE when required to do so.
- Shows motivation, professionalism, skills and team spirit in performing duties.
- Reports all accidents, health and safety hazards to the Chef de Partie.
- Is aware of Hotel fire, safety and security procedures.
- Performs shifts/ duties in any Kitchen/ Food and Beverage related area/ department as required by management
