The Venue
At AURA, located in North Sydney, Etymon is developing a lifestyle hospitality offering for residents and the local community alike. An artful mix of carefully curated venues including eateries and retail which are collectively designed to be a beacon for visitors and a playground for residents.
The development will include an LA-inspired all-day diner; a bakery, cafe and wine bar that’ll be open from breakfast through to aperitivo hour and dinner; a contemporary Japanese restaurant; and a provedore stocking sustainably sourced groceries and artisanal products.
The Opportunity
Reporting to the Culinary Director, the Executive Chef will oversee the kitchen operations within the 4 diverse offerings within AURA, working alongside and developing the Head Chef/Sous Chef for each venue to ensure high quality, well executed product and standards.
The Details
- Demonstrate and enforce excellence and consistency in the product, service standards and product presentation across the precinct
- Manage and execute induction, onboarding, and training plans for kitchen teams.
- Lead a culture of efficient and realistic cost management that encourages revenue growth.
- Focus on revenue creation and the delivery of margin through best practice menu design and management.
- Ensure a safe working environment to reduce the risk of injury and accidents.
- Assist with developing and maintaining the highest food safety standards.
- Develop and maintain strong relationships with Councils and Food Safety authorities in jurisdictions where Food operates.
- Build an inspirational kitchen leadership team and ensure they work as a team consistent with the Etymon’s culture and agreed strategic plans.
- Plan and execute a clear resourcing plan with short and long term in mind, succession, and retention as key focuses.
- Experience managing multi-outlet operations as an Executive Chef
- Experience working within a fast-paced, multi-faceted hospitality group
- Excellent stakeholder management and builds trust
- Commercially savvy, good understanding of the levers to pull to affect change
- Experience managing large teams, including recruitment and development
- Excellence in culinary operations including Health, Safety & Environment
