Ian Curley, the owner of “Exec Chef”, French Saloon, Kirk's Wine Bar, Kirk's Cellar Dining, and an upcoming bayside venue, is seeking a talented and experienced Executive Chef to join his team. This is an exciting opportunity to work in one of Melbourne's renowned dining establishments and contribute to the success of Ian Curley's culinary ventures.
"Exec Chef" is in search of a visionary Chef to fit into our culinary team and create an exceptional dining experience like no other. The position requires a well-seasoned Head chef or an up-and-coming Senior Sous Chef ready for the ride of a lifetime. You must have at least 3 years of work experience for this role.
You will be one of the creative forces behind the establishment’s gastronomic journey. With your exceptional culinary expertise and innovative spirit, you will help shape our menus, curating a symphony of flavors that will captivate our guests' palates. From conceptualizing tantalizing dishes to sourcing the finest ingredients, your passion for culinary excellence will shine through in every bite.
Skills and Experience:
The role has a daily report to the Owners and suits an experienced, enthusiastic, and highly organised chef.
Key requirements and responsibilities:
- You have a keen eye for detail and commitment to maintaining the highest standards of food safety and hygiene
- A professional "hands on approach" with an enthusiastic work manner
- Developing new ideas, new dishes, new concepts and new menus to make our restaurant delectable
- Demonstrating high level management skills and a keen eye for sound costing and budgeting.

- Showcasing your experience in high end venues and a solid understanding of how successful kitchens work
- You are great with your hands and like nothing better than being on the fly on a chaotic Saturday night
- Your leadership skills will be paramount as you guide and inspire our kitchen team, monitor quality and foster a culture of excellence and teamwork.
- Explaining and enforcing hygiene regulations
A successful candidate will:
- Have at least a Certificate IV or Diploma in Commercial Cookery or relevant equivalent
- Have over 3 years of experience as a Chef in lieu of a qualification
- Have a strong passion for food knowledge and quality local produce
- Have a thirst for growth with the ability to lead, inspire and motivate a team.
