Experienced Pastrycook required for Jewish bakery in Surry Hills, Sydney. Previous employment in the preparation of bagels, knish, babka, rugelach and challah should be considered an essential precondition for consideration. At least two years total baking experience is required. Formal trade qualifications are preferred but not mandatory. Qualifications may be local or international.
Significant experience in commercial sourdough bakery is mandatory. Those could cannot demonstrate this experience should not apply.
Technical skill requirements include dough production, oven operation (including multiple ovens simultaneously), pastry production, bench sheeting, dough shaping, correct proofing, order of operation controls, contribution to new menu concepts, food safety practices, assisting with training apprentice or young bakers, cake decorating, rigorous application of standards, following recipe cards, packing orders, stocking the shopfront, basic maintenance of bakery equipment.
A trial shift to demonstrate a range of these skills will be required to be considered for final selection and employment.
This business encompasses an entirely open kitchen, and as such all staff are required to engage in customer service, food handling, payment management and stock control. To this end, excellent English language and communication skills are mandatory. Moreover, a friendly and open disposition is key to the role. Those who are not keen to engage in ongoing customer service or who feel they are not suited to it should not apply.
