Sous Chef/Junior Sous – Republic of Fremantle Hospitality

THE HOSPITALITY:
The venue at the Republic of Fremantle is a physical embodiment of and spiritual home to the Republic of Fremantle Distillery. As a hospitality team we showcase the exceptional products produced by the distilling team, whilst also communicating the ethos of the company through a world class hospitality experience. We aim to deliver professional service and high-quality product in a relaxed and comfortable atmosphere.
THE ROLE:
We are searching for a passionate and driven individual to operate as the second in command in the Kitchen brigade. Our food offering has been exceptional in challenging circumstances. We are looking for someone who will maintain that standard and drive themselves and the team daily to achieve excellence; to meet the bar set by Head Chef Rene Mobius. Daily kitchen operation will be a responsibility of the Sous-Chef.
THE CANDIDATE:
We are searching for a chef with a keen sense for people management and organisation. The person who accepts this role would have experience in a similar management role, be a confident manager of people both on shift and off, be excited to collaborate with an exceptional bar team, be calm, decisive, and adaptable in high-pressure situations, and be driven to grow with the brand.
An advanced practical skillset is of advantage, as our menu items are made from scratch (such as bread, sauces, stock etc.)
Creative drive and a desire to write menu’s is welcome but not necessary.
RESPONSIBILITIES INCLUDE:
- Assisting the Head Chef in day-to-day kitchen operations
- Stock and produce ordering
- Maintaining a strict prep regime
- Supervising and training junior team members
- Maintaining the high standard of work set by the Head Chef
- Managing the kitchen during service
- Maintaining and further developing a positive staff culture
JOB OFFER
- Full time salary position
- 4-day roster
- Ongoing career development within the company
- Starting salary between $70,000 - $80,000
- Opportunity to participate in Employee Share Scheme
- Reporting to the Head Chef
- Based in Fremantle, Western Australia
