• Shared responsibility and management with the winemaker on all winemaking decisions and day to day operations
• Key role in quality control within wine specifications
• Cellar work – racking, blending, barrel work etc.
• Vintage operations – planning, yeasting, crushing, pressing, pumping over
• Lab work
• Supply technical information for winery records
