AURA by Aqualand, located on Walker Street near the new Victoria Cross Metro Station is an iconic new address and symbol of North Sydney’s sophisticated future, setting a new precedent for luxury harbourside living.

Etymon is developing a multi-level lifestyle hospitality offering for residents and the local community alike. An artful mix of carefully curated venues including eateries and retail which are collectively designed to be a beacon for visitors and a playground for residents.
Included in the precinct will be a 300 seat LA-inspired all-day diner, a combined bakery, cafe and wine bar, which will transform from casual dining throughout the day to a sophisticated wine bar by night, along with a modern Japanese restaurant and a providore selling good crafted by our talented culinary teams.
The Opportunity
We are recruiting a Precinct Bars Manager to take carriage of the beverage program and bar team across 3 venues: Soluna, our All-Day Diner, Sol, our Cafe/Wine Bar and Genzo, our Modern Japanese Restaurant. In this role you will work hand-in-hand with our Precinct Head Sommelier, Venue Managers, Head Chefs and Executive Chef to ensure synergy across all departments and venues within the precinct.
Ultimately you will be responsible for product development, guest and employee experience and the delivering against KPI's set as they relate to the performance of one of the AURA bars.
The Role
- Lead the recruitment, training and development of a dedicated and highly competent bar team.
- Build upon the guest experience and product offering as needed, based on guest market trends, feedback and learnings.
- Working with the Director of Bars and General Manager, refine and embed policies, procedures and training programs for the bar teams, ensuring the delivery of the excellence we aim to achieve.
- Through your leadership, create a high-performance culture across the venues within the precinct, through aligned priorities and clear purpose.
- Collaborate with the venue leadership team, including General Manager, Executive Chef, Head Sommelier and Venue Managers, to deliver a consistent product across all areas to the highest standards.
- Work with the Cellar Manager to ensure consistent supply and management of beverage inventory for the precinct.
- Manage the financial aspects of the bars by establishing cost controls to ensure profitability, while delivering high quality offerings and service.
- Demonstrated leadership, developing and nurturing young talent.
- Proven experience leading teams in a variety of bar environments.
- Experience curating distinct cocktail menus with a clear voice.
- Prior experience with venue openings and recruitment beneficial.
