Thecandidate in mind will be expected to perform the following duties that includebut are not limited to:
- 3yrs experience in a similarleadership role within the hospitality industry.
- Proven experience insupervising staff.
- Proven ability to takeresponsibility and work autonomously.
- Ability to multitask andproblem solve quickly.
- Effective time managementskills, including the ability to manage multiple priorities, volume anddeadlines.
- The ability to stay calmwhilst working under pressure, make appropriate decisions quickly whilemaintaining professionalism and a positive attitude.
- Excellent communicationskills (written, verbal, listening).
- Strong attention to detailand speed.
- Initiative and willingnessto learn.
- Ability to work as part of ateam and to interact positively with others.
- Ability to train,communicate and supervise staff effectively.
- Sound knowledge of workhealth and safety responsibilities and a commitment to Workplace Health andSafety and safe food handling and hygiene.
KitchenOperations:
Work closely with the Head Chef on thefollowing;
- ensure food revenues aremaximised.
- manage and lead the kitchenteam
- ensure food standards,preparation, presentation and cooking techniques are established and monitored.
- complete daily, weekly andmonthly reporting tasks in a timely and accurate manner
- Ensure the kitchen team arecompliant with food safety and hygiene standards.
- Ensure food and kitchen wagecosts remain within budget.
- Research and recommendchanges to improve the overall efficiency of the kitchen.
- Assess the quality ofproducts and the services being delivered by the kitchen.
- Report maintenance issues asthey arise and ensure equipment is safe to operate.
- Coordinate daily foodrequirements considering delivery times, shelf life and storage capabilities.
- Train, update andcommunicate any relevant changes to staff (e.g. daily specials, changes tomenu, implementation of new processes etc.).
Inaddition, you will be required to:
- Prepare, cook and presentfood.
- Maintain a thoroughknowledge of The Mex food and beverage products, as well as an understanding ofnon-food and beverage products.
- Problem solve escalatedcustomer complaints and queries in conjunction with the Head Waiter/Waitress.
- Complete kitchen opening andclosing procedures.
- Follow all relevant healthdepartment regulations.
- Assist other kitchen staffas required.
PeopleManagement:
- Provide new starter trainingto kitchen staff
- Conduct appropriate trainingof kitchen staff, ensuring relevant training manuals are up to date andavailable to employees at all times.
- Provide employees withfeedback on their performance in an objective and timely manner
- Provide support to thedining team.
General:
- Develop and maintaineffective relationships with the management team and employees at all levelsacross the business.
- Develop and maintain effectiverelationships with key external stakeholders at all times.
- Actively participate in teammeetings and ensure effective communication of key business activities on anongoing basis;
- Conform to all relevantcompany policies and procedures and relevant Acts and Legislation.
- Adhere to all obligationsfor a safe workplace in accordance with the Occupational Health and Safety Act2004.
Qualifications:
- Cert III or Cert IV orDiploma in commercial cookery, plus 2 years post qualifications as cook/chef orat least 3 years’ experience as Cook/Chef
- Valid Food HandlingCertificate Level 1 First Aid

- Certificate III inCommercial Cookery (Preferred)
