Sage Wollongong is recruiting for a talented Executive Sous Chef to lead our Kitchen Team across all food & beverage outlets. This role is responsible for leading the food-production operations for CWC Restaurant & Bar, Five Islands Restaurant and our Conferencing / Events delivery. With the support of the Executive Chef; our Exec Sous Chef will work to supervise, motivate, and train the kitchen team across systems, menus and food quality, whilst driving the team to elevate our offering.

Sage Hotel Wollongong boasts a key location against a stunning southern coastal backdrop. Offering 168 guest rooms, generous conferencing facilities, Coldwater Creek Bar and Five Islands Restaurant; we invite our guests to make the most of Wollongong.

About the Role

Working closely with and supporting our Executive Chef, the Executive Sous Chef will:

  • Assist in menu planning & development across all outlets 
  • Work closely with our Exec Chef to supervise, motivate, and train the kitchen team across kitchen systems, menus and food quality
  • Lead by example in food preparation and professional conduct 
  • Work closely with the leadership team to maintain kitchen costings and achieve budget
  • Assist in driving and motivating the kitchen team to achieve KPI's
  • Maintain a high level of cleanliness within the kitchen at all times

About You 

To be successful in this role, you will: 

  • Be trade qualified and the enthusiasm to learn & develop skills further
  • Have previous hotel experience at Sous Chef/Senior Chef role.
  • Conference and events experience
  • Passionate about creating a fun and innovative team environment.
  • Adaptable to the different customer demands
  • The ability to keep calm under pressure.
  • A true passion for fresh ingredients & quality local produce
  • Be creative and bring fresh ideas to the team
  • Well-groomed with a high standard of hygiene
  • Professional attitude and the ability to take direction.
  • Full working rights, with flexibility to work rotating roster with no availabilty restrictions.
