Macchiato, a vibrant and very busy Italian restaurant in Sydney’s CBD, is seeking to add a full time Café / Restaurant Manager to our Front-Of-House. This is an excellent opportunity to join our expanding team.
About the role
We are looking for an individual with the following qualities and who is able to:
Plan menus in consultation with Chefs
Plan and organise special functions
Arrange purchasing and pricing of goods according to budget
Maintain records of stock levels and financial transactions
Ensure dining facilities comply with health regulations and are clean, functional and of suitable appearance
Confer with customers to assess their satisfaction with meals and service
Select, train, and supervise waiting and kitchen staff
Take reservations, greet guests, and assist in taking orders
Manage customer payments
Provide end-of-day reporting
Has a valid RSA certificate
Ensure systems compliance
Order beverage and take-away stock appropriately to sales levels and avoid over-ordering
Send back all supplies that do not meet quality standards and contact the relevant suppliers for correction of the trend
Create weekly staff rosters
Ensure that deliveries are checked and signed for by where this is not possible a record must be placed onto the delivery note
Prepare service appropriate to sales levels
Control wastage and record / report all wastage
Ensure petty cash purchases are minimum or close to zero
Process and account for all invoices weekly
Manage pass staff and ensure that Food policy is followed with no unauthorized, sub quality food leaving the kitchen
Inspire & motivate the team to achieve food to specification and therefore achieve sales and profits
Lead by example, setting the pace and standards within the team
Train and develop the team to deliver food to specification and therefore meet or exceed customer’s expectations
Communicate with the Head Chef especially during peak business
Communicate via Team meetings, one-on-one meetings, training sessions, notice boards and written
The successful applicant will be a motivated and experienced Chef and possess the following:
Previous experience as a Restaurant Manager
Demonstrated Management experience
A team player and a supportive leader
Someone who can handle pressure.
