One of our partner venue (Bigg Bunz Pty Ltd) is in need of new Chef De Partie whoc can join their team.

Qualifications & experience
- Must be a qualified Chef.
- Minimum of 5 years of experience.
- High skill in a culinary specialty desired. Whether will it be Western, Eastern, Asian or Mediterranean dishes.
Tasks & responsibilities
- Oversee food preparation and cooking activities in assigned kitchen stations.
- Supervise approximately 10 kitchen staff members and work across various kitchen stations as required.
- Ensure all kitchen staff understand their tasks by providing clear instructions during daily briefings.
- Monitor stock levels and create ordering lists for necessary items.
- Supervise production processes to ensure timely and quality food output.
- Input daily inventory data into the system and track sales records.
- Contribute to menu planning and perform food costing for group events.
- Execute specialized cooking techniques such as sautéing, frying, steaming, roasting, boiling, blanching, and marination.
- Prepare dishes from a diverse international menu, including Filipino, Chinese, Italian, and American cuisines.
- Utilize preservation techniques such as refrigeration, freezing, pickling, vacuum packing, and vinegar.
- Participate in menu planning, considering customer preferences, ingredient availability, and cost-effectiveness.
- Implement budgeting techniques by controlling stock orders and daily production.
- Minimize food costs and waste by accurately portioning ingredients and managing inventory.
- Conduct daily inventories for portioned items and monthly inventories for general supplies.
- Compile stock lists and coordinate with purchasers for timely procurement.
- Maintain strict but respectful leadership, addressing staff issues and concerns promptly.
- Handle customer complaints with empathy and offer appropriate solutions to ensure satisfaction.
- Delegate dessert, pastry, appetizer, pizza, and pasta preparation tasks while overseeing their execution.
- Accommodate guests with special dietary requirements by providing suitable menu options.
- Introduce weekly chef's specials featuring unique ingredients and flavors.
- Train new hires through handouts, detailed explanations of kitchen routines, and hands-on demonstrations.
- Verify cleanliness of kitchen areas, including chillers/freezers, to maintain hygiene standards.
