About the Role
We have an amazing opportunity to join the culinary team and continue the legacy of providing our guests with outstanding dining experiences. As a Head Chef you will have a love for preparing & cooking great products to standard, ensuring every guest who eats with us has a great food experience. You will do this by being fanatical about delivering quality food, take pride is maintaining the highest standards of cleanliness and food safety and by having the knowledge to be able to execute Hyatt standards every time.

Managing the team, you will support the Director of Culinary and F&B operation in supervising and managing the day to day operations as well as supporting the team to achieve our purpose.
This varied and dynamic role provides a chance to develop your Hospitality career within an international company.
Some of the responsibilities include:
- Developing and maintaining recipes which allow the outlets to operate food and labor costs within the established budget.
- Review and analyze menus, recipes and food to determine costs, profitability and success of the outlet.
- Managing and supervising the kitchen brigade in the performance of their duties and ensure learning opportunities
- Ensuring the quality of all food items produced are of the highest standards
- Controlling the requisitioning, storage and careful use of all operating equipment and supplies
- Ensuring all culinary standards comply with Company and Hotel policies and procedures
- Maximizing employee productivity and morale.
- Ensure all food, beverage and equipment items requirements are met including cost control and waste management.
- Mentor, train and guide the kitchen and implementing training programs for areas of need.
Qualifications
- Experience as a Head Chef / Executive Sous chef in a large four or five star hotel or restaurant.
- Certificate III in Commercial Cookery (or equivalent)
- Proven experience in compiling menus, recipes and presentation of food
- Exceptional communication, time management and people skills with the ability to lead a team
- Strong focus on food safety systems including HACCP
- The confidence to promote ideas and make sound decisions under pressure
- The flexibility to work on a 24/7 rotating roster including public holidays.
