The Clairfield Hotel in Mudgee is looking for an extraordinary Head Chef to oversee two outlets (a premium 70 seat restaurant and laidback 30 seat lounge bar) and pool side offerings, building on the reputation to establish the brand at the forefront of cuisine in the area.

This is a rare opportunity to create and execute elevated yet approachable cuisine using high quality, with encouragement for, locally sourced produce. We would like you to create the restaurant that Mudgee locals recommend.
In addition to a competitive salary package, we offer the opportunity to work in a brand-new, state-of-the-art kitchen (see video for the layout and list of items that we currently have specified). The successful candidate will also be able to build a dynamic, passionate team, and be a part of the exciting launch of a new boutique hotel.
About us:
We are a small family run business who believe in supporting and looking after our team. Creating unique experiences for our guests, helping our team grow and putting smiles on faces is what drives us.
About the property:
The new hotel is currently under construction and will be complete in approximately June 2024. It consists of 56 rooms (with 13 luxurious upper-level rooms), a heated pool, steam room, gym, wellness centre (with infrared saunas and float tanks), grand reception, restaurant, bar and small conference room.
Your start date will be as soon as practical. You’ll have the opportunity for test runs and to hire your team prior to service starting.
We, of course, will be there to support you the whole way.
We understand that this is a huge undertaking and we want to ensure that you are given the time and support required to build something special.
Your Candidate Profile:
- 5+ years of experience as a Head Chef or Executive Chef within a multi-faceted business.
- Creativity around menu development and food presentation within modern cuisine.
- Extensive knowledge of local and seasonal produce, as well as sustainable food practices.
- Ability to establish relationships with local suppliers to source incredible quality produce.
- Excellent communication skills, with the ability to lead, mentor, and inspire a team of chefs and kitchen staff.
- Strong financial acumen, relevant to labour and inventory cost control.
- Excellent organizational and time-management skills.
- You are interested in the position for at least 3-5 years. We want to build a long-term relationship with you.

- Attractive remuneration package ($95,000-$110,000 + Super) commensurate with experience
