Are you a talented and experienced Sous Chef looking for an exciting opportunity in a high-volume upmarket pub venue?

We are seeking a dynamic and skilled individual to join our team in the Sous Chef role at our venue - Darling Pavilion. If you are passionate about delivering exceptional food, managing a fast-paced kitchen environment, and working in a collaborative team, then this role is perfect for you!

The group has been operating in the Sydney hotel market since 1998 and the Kospetas family exceeds 40 years’ experience in hospitality. The family has established a respected name that is synonymous with excellence in food, beverage, service and entertainment.

Darling Pavilion is our 15th venue. It was opened at the start of August 2023, and already this venue will is a popular destination known for its vibrant atmosphere, excellent food, and top-notch service. Located in a bustling Darling Harbour, next to Tumbalong Park, we cater to a diverse clientele, offering a wide range of classic and innovative dishes crafted from the finest locally sourced ingredients.

This kitchen operates at a high volume, ensuring a fast-paced and exciting work environment. As part of the senior kitchen team you will be instrumental in the development and success of our food operation.

We have a role in our Senior chef group for a seasoned Sous Chef looking for a change or experienced Chef de Parties looking for a step up in their career. 

Responsibilities:

  • Assist the Head Chef in managing all aspects of the kitchen, including food preparation, cooking, and presentation.
  • Oversee and train junior kitchen staff to ensure efficient and smooth operations during busy periods.
  • Take charge in the absence of the Head Chef, making decisions and delegating tasks to maintain quality and productivity.
  • Collaborate with the culinary team to develop creative and seasonally-inspired menu items that align with customer preferences.
  • Ensure adherence to food safety and hygiene standards, maintaining a clean and organized kitchen at all times.
  • Monitor inventory levels, place orders for supplies, and ensure proper storage of ingredients to minimize wastage.
  • Contribute to the development and improvement of recipes, portion sizes, and kitchen procedures to enhance overall efficiency and customer satisfaction.
  • Foster a positive and collaborative working environment, motivating and supporting team members to achieve their full potential.

Requirements:

  • Proven experience as a chef in a high-volume restaurant or pub venue
  • Great culinary skills, with a focus on quality, taste, and presentation.
  • Knowledge of various cooking techniques and cuisines.
  • A desire to grow and learn yourself and the people around you
  • A can do attitude, that doesn't falter when the heat comes.
  • Strong leadership and organizational abilities, with the capability to handle multiple tasks simultaneously.
  • Excellent communication and interpersonal skills to effectively interact with kitchen staff and management.
  • Ability to thrive in a fast-paced environment and work well under pressure.
  • Knowledge of food safety and sanitation regulations.
  • Flexibility to work evenings, weekends, and holidays as per operational requirements.
